This chocolate is distinguished by its powerful notes of cocoa followed by the aromas of almonds. This Trinitario cocoa comes from the Upala region, in the northern plains of Costa Rica. Its taste varies according to the mixture and the seasons. It is recognized for its fruity notes and both earthy undertones.
The fermentation is done in wooden vats, divided into three parts, which facilitates the passage from one vat to another, every two days. The process takes about 5 to 6 days, depending on the climate. Aromatic profile: toasted/dried fruits.
